Lightened-Up Beef & Turkey Stroganoff

Ingredients

  • 1 pound 90/10 ground beef
  • 1 pound 93/7 ground turkey
  • 1 medium onion (~170 g)
  • 6 cloves garlic, minced
  • 16 ounces white mushrooms, chopped
  • 1/2 cup (~62 g) all-purpose flour
  • 5 cups beef broth (or 5 cups water and 5 teaspoons beef base)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 6 tablespoons (~90 g) light sour cream (I like to use Daisy brand)
  • Rice, cauliflower rice, egg noodles, spaghetti squash etc for serving.

Instructions

In a large deep dish skillet combine beef, turkey, onion and garlic. Cook over medium heat, when it's about half way done cooking, add the chopped mushrooms, continue to cook until the meat is no longer pink and meat is fully cooked. Evenly sprinkle the flour over the meat mixture and stir to combine. Pour beef broth over the meat, stir to combine. Let it simmer for about 5 minutes until it's thickened to desired consistency. Stir in the sour cream when you remove it from the heat. Serve over rice, cauliflower rice, egg noodles, spaghetti squash etc.
