Happy Thanksgiving! With all the treats, goodies, and heavy food that comes this time of year, I thought a bright, fresh smoothie would be a good thing to share! I hope you’ll enjoy this one. It’s light and fresh and full of protein!
When I first started counting macros, I had to make a huge shift in figuring out how to eat as much protein as I needed to hit my goals. One thing I noticed in my first cut was that as I was upping protein, I was lacking in the fiber department. I’ve figured that out since, but having a good fiber start to the day or mixed in as a snack later has really helped me get enough fiber.
This green smoothie recipe has 23 g carbs (6 of which are fiber), 22g protein and 2g fat. It’s a great breakfast, pre or post workout meal or a snack during the day. When I want to use up more macros I’ll add a few more things to my smoothie. Such as 50g of blueberries and ½ – 1 tablespoon of coconut butter (this gives an incredible extra bit of flavor). This adds a few carbs (some more fiber) and some fat. You can also add some more collagen if you want more protein. Play with it! I’ve found the balance of fruit to spinach I have in this recipe doesn’t make it taste so green, if you know what I mean! The lemon really shines in taking that green taste out.
- 1 cup water
- 1 tsp chia seeds
- 2 cups (85 g) fresh or frozen spinach
- 60 g frozen strawberries
- 100 g pineapple
- 1 slice of lemon, cut ⅔ of the rind off (see note)
- 2 scoops (20 g) collagen peptides (see note)
Place all ingredients except collagen powder, in the blender and blend until smooth. Once smooth add collagen and mix until incorporated (this foams up the smoothie a bit). Enjoy!
Not included in the MFP macros (but feel free to add):
50 g blueberries
½-1 tablespoon coconut butter
Cut ⅔ of the rind off your lemon slice, pending you have a good blender that will get it nice and smooth. My Blentec blends it well enough that there are no chunks remaining. If your blender doesn’t blend super well, maybe cut all the rind off.
I put 20 g (weight) of collagen powder in this recipe. That amount equates to 20g of protein. You can adjust the weight of yours if it’s different.
